Our Mexican coffee is a single origin coffee with warmth, color, and a quiet reverence beneath the surface. Drawn from coffee growers in Chiapas and Oaxaca, this medium roast opens with notes of chocolate, cinnamon, and green apple, creating a cup that feels both grounded and luminous. The sweetness is soft and steady, the spice subtle, and the fruit bright enough to lift the darker tones without disturbing their balance. It is a profile that calls to mind marigold light, painted altars, candle smoke, and the rich, living atmosphere of Día de los Muertos. Grown at 900 to 1000 meters in clay mineral soils, and fully washed before being dried in the sun, this coffee has a clean structure and composed finish. Varieties including Typica, Criollo, Bourbon, Mundo Novo, and Caturra bring nuance and softness to the cup.
